JERK MARINADE - EVOO
  • ¼ cup thyme woody stem intact
  • 2/3 cup scotch bonnet/habanero pepper green stem removed
  • ¼ cup jalapeno pepper stem removed
  • ¼ cup all spice berries
  • 5 whole cloves
  • 1 teaspoon black peppercorns
  • 2 tablespoons of whole coriander seeds
  • 1 clove of garlic
  • 2 tablespoons of lemon juice
  • ½ cup infused evoo ½ cup of regular evoo
  • Combine all ingredients (except evoo) in blender
  • Gradually pour EVOO in blender and mix until thoroughly combined
                      Use as marinade for poultry, fish, and vegetables
